Refreshing Juices for all occasions by Caroline O’Hanlon
My aim for this feature was to come up with ideas for drinks that look and taste good for people who can’t drink alcohol.
This may be for medical or any number of other reasons.
I am not a manufacturer or an ‘expert’, I simply enjoy exploring juices. These are a selection of my favourites. For best results, give juices plenty of chill time in the fridge before serving.
The ideas are quick and easy to make up. I get a wide range of juices from health food stores and supermarkets. Then I try out various combinations. Be creative and enjoy!
Lemon Ginger Crush
This drink is very refreshing, especially if you are in hot and crowded places.
Recipe:
1 litre bottle of fiery ginger beer.
4 lemons – 2 for squeezing and 2 for slices.
Ice cubes (lots).
Method:
Squeeze 2 lemons for juice and finely slice 2 lemons to serve with drinks.
Place ice cubes in glass jug.
Add in freshly squeezed lemon juice.
Add in fiery ginger beer.
Stir well.
Repeat the above method if you need more.
Add in lemon slices and serve.
(Serves 4)
Recipe:
750ml/25fl.oz of Watermelon juice
1 litre of Sparkling mineral water
1 bunch of Fresh mint leaves
Sliced lemon
Ice cubes (plenty)
Lemon slices to decorate
Method:
Place ice cubes in glasses
Fill the glasses half way with water melon juice
Top up with sparkling mineral water
Add in a generous sprig of fresh mint leaves
Decorate with lemon slices
(serves 4)
Recipe:
300ml/10fl.oz Pineapple juice
300ml/10fl.oz Coconut Milk
2 limes – 1 for squeezing and 1 for slices
Ice cubes
Cocktail Shaker
Method:
Squeeze the juice of 1 lime
Pour the freshly squeezed lime juice, pineapple juice and coconut milk into cocktail shaker
Shake vigorously
Pour into 2 tumbler glasses and serve with ice and lime slices
(serves 2)
Recipe:
125ml/5fl.oz of Elderflower Cordial
400ml/15fl.oz of Apple juice
1 litre of Sparkling Mineral water
Cocktail shaker
Method:
Mix the elderflower cordial and apple juice in a cocktail shaker and give it a good shake.
Fill ‘flute’ glasses about half way and top up with sparkling mineral water.
(Serves 4)
Blueberry and Pomegranate Juice
Recipe:
300ml/10fl.oz natural blueberry juice
300ml/10fl.oz natural pomegranate juice (available in health stores and some supermarkets)
Ice cubes
Lemon slices to decorate
Cocktail Shaker
Method:
Pour the blueberry juice and pomegranate juice into the cocktail shaker.
Shake vigorously
Pour into 2 tumbler glasses and serve with ice and lemon slices
(serves 2)
Recipe:
600ml/20fl.oz Cranberry juice
2 Limes (1 for squeezing and 1 for slices)
Ice cubes
Cocktail shaker
Method:
Squeeze the juice from 1 lime and pour into the cocktail shaker
Add in the Cranberry juice
Shake vigorously
Pour into 2 glasses
Serve with ice and wedges of fresh lime
(serves 2)
