Simple snack – tomato bruschetta

When we think about Italy, we normally picture food full of flavour, lovingly prepared by an Italian mamma for hours and hours. These days though, we all lead busy and frantic lives – even an Italian women such as me – but all the same, we needn’t compromise on taste.

Here’s one of my favourite quick, easy and satisfying Italian eating ideas which can be found from Tuscany all the way down to Puglia in the south of Italy.

This simple snack comprises bruschetta, tomatoes, garlic, oil, seasoning and basil … and can be made in 4 easy steps:

1. Buy good quality country bread and slice to 1 inch thick. I use a round French ‘Pain de campagne’ from Sainsbury’s.

2. Toast until golden brown. While still hot, rub your slice with good extra virgin olive oil on one side (I use Napolina’s oil) and then rub with crushed whole cloves of garlic (you need half a clove for each slice).

3. Season your cherry tomatoes (the ones on the vine have more flavour) with salt, pepper, a dash of olive oil and some balsamic vinegar.

4. Arrange your tomatoes on top and over everything scatter some coarsely chopped basil and enjoy!!

You can enjoy bruschetta at any time of day and I guarantee that once you have made it yourself, you’d never want to go eat it any other way!

Enjoy your meal or as we say in Italy, Buon Appetito!
