Summary:  CAU (pronounced ‘cow’,) stands for Carne Argentina Única, which translates as Unique Argentinian Beef, and was founded by the brains behind the Gaucho chain. For almost 200 years, Argentinians have been breeding Aberdeen Angus on the pampas. Here, they roam freely while grazing on 17 varieties of grass. This produces very flavoursome beef. The beef is ‘wet aged’, a process that brings out the subtle flavour of the meat, without losing any of its juiciness, to yield tender, low fat, richly flavoured steaks.As well as a full range of wet-aged lomito fillets, rib-eyes, sirloins and tapa de cuadril (cut from the haunch), the international menu also offers salads, burgers, handmade ravioli, fishcakes and desserts such as dulce de leche pancakes. The drinks list includes smoothies and mini-shakes alongside cocktails, world beers, South American wines and jugs of regional clericots (a fruity wine-based beverage).CAU’s décor involves grassy-green pampas imagery on the ceiling and splashes of sky blue, plus a white-on-black resin floor and corrugated white walls.
