Vegan Tortilla Pizza recipe

Full Description


You’ll need:

(Feeds 2, or 4 along with a salad)DSC_2469-610x405

1/2 onion, diced
2 cloves garlic, minced
1 cup diced tomatoes
1 tsp tomato puree
1/2 tsp paprika
1 tbsp red wine
1 zucchini, thinly sliced
3 cups mushrooms, chopped
2-3 handfuls spinach, torn
hot sauce
4 tortilla wraps
good quality oil
black pepper

Method:

  • Heat a little oil in a pan, and saute the onion and garlic until translucent.
  • Add in the diced tomatoes, paprika, tomato puree and red wine, and stir to combine.
  • Reduce the sauce over a medium heat for 5-10 minutes, or until it is less watery.
  • Preheat the oven to 180 degrees Celsius.
  • Place two tortillas together to create the crust, and spoon 1/2 the sauce on top of it, spreading it right to the edges.
  • Top with half the zucchini slices, mushrooms and spinach, and drizzle with hot sauce.
  • Repeat for the rest of the ingredients, making 2 pizzas.
  • Bake in the oven for 15 minutes, or until the vegetables are softened and cooked through.
  • Cut in half if serving to 4, and serve with a large garden salad.
  • If serving to two, slice and serve!
